This cookbook was a 1956 wedding gift to my mother. She's gone now — but her recipes aren't. If you want to see how Babette's Table works before you buy a full volume, this is the door: a sample pack of three soup recipes from Bayerisches Kochbuch, translated from Fraktur, with the same headnotes and US measurements as Vol. 1.
Fleischbrühe is the ground. Kartoffelsuppe is the weeknight pot. Fruchtsuppe is the one that will confuse you and then, if you let it, delight you — cold fruit soup, a first course, not a dessert. My mother served it in schnapps glasses and told us to drink it slowly.
