Bayerisches Kochbuch — English PDF of the 1956 Bavarian Cookbook

This is a translation of Maria Hofmann's Bayerisches Kochbuch — the Bavarian Cookbook — 26th edition, published by Birken-Verlag in Munich in 1956. The original is printed in Fraktur, the angular Gothic typeface most people today cannot read. I translate it carefully, by hand, into English, with US measurements, historical headnotes, and a week-of-meals grid for each recipe.

The physical book was a wedding gift to my mother, Erna Paul, in postwar Bavaria. She cooked from it for decades and brought it with her to the United States. Behind her was Babette Martin — her grandmother — for whom this project is named. Babette's Table is a translation project and a history project from that single book.
