The drinks and pantry staples behind the rest of the book
This cookbook was a 1956 wedding gift to my mother. She's gone now, but her recipes aren't. Volume 15 comes from the Getränke & Verschiedenes (drinks and miscellaneous) pages of Bayerisches Kochbuch. It starts with bean coffee measured by the gram, cocoa and drinking chocolate, then two winter drinks: Glühwein and a hot grog made with rum or arrack. The rest is pantry work: a homemade mustard left to mellow for weeks in a stoneware crock, a fresh quark spread, herb butter, mustard butter and the book's master method for clarified butter (Butterschmalz).
Each recipe has its original German name and number from the book, two headnote paragraphs, a historical note, US measurements with metric equivalents, a step-by-step method and a five-day meal grid built around the dish. Instant PDF download on Etsy. No physical book.
